المستخلص: Algeria is considered one of the largest importers of wheat. This is mainly due to the very high domestic demand for wheat, which is only covered by domestic production at a very low level. This situation makes Algeria vulnerable and subjects it to inevitable food dependency. On the one hand, the food bill is increasingly heavy to bear because we are subject to speculation on the international wheat market and on the other hand, the unpredictability of wheat consumption in Algeria weakens all public policies undertaken. The demand for wheat in Algeria strongly increases as the population normally increases. There would certainly be other factors governing this demand, namely the standard of living, purchasing power, prices on the international and national markets, etc. Our work consists of a study of the various factors influencing the behavior of the Algerian consumer towards wheat, which is a very important product in the Algerian consumer's diet. Therefore we tried to design a model for the Algerian wheat demand. The omnipresent intervention of the Algerian State in the wheat and rivet market makes our task difficult because it could bias any result. This abstract was translated by Dar AlMandumah Inc

L’Algérie est considérée parmi les pays les plus gros importateurs de blé. Ceci est essentiellement, dû à la très forte demande intérieure de blé; demande qui n’est couvert par la production nationale qu’à un niveau très bas. Cette situation rend l’Algérie vulnérable et la soumet à une dépendance alimentaire inévitable. D’une part la facture alimentaire est de plus en plus lourde à supporter car on est soumis aux spéculations du marché international du blé et d’autre part, la non- prévisibilité de la consommation du blé en Algérie fragilise toutes politiques publiques entreprises. La demande de blé en Algérie s’accroit très fortement au fur et à mesure que la population augmente normalement. Il existerait certainement d’autres facteurs régissant cette demande ; à savoir le niveau de vie, la pouvoir d’achat, les prix sur les marchés international et national etc. Notre travail consiste en une étude des différents facteurs influant sur le comportement du consommateur algérien vis-à-vis du blé, produits très important dans son régime alimentaire. Par conséquent nous avons essayé de modéliser la demande de blé propre à l’algérien. L’intervention omniprésente de l’Etat algérien dans le marché des blés et des rivés rends notre tache difficile car cela pourrait biaiser tout résultat
