Poultry meat is considered one of most important food sources in Yemen. Demand for Poultry increased considerably over the last few years because of high prices of red meat such as beef and mutton. The study showed a positive relationship between quantity demanded of poultry and per capita income. The study revealed that when the income increase by 10 percent the quality demanded of poultry increased by 7 percent which matching with the economic theory. The study showed that there was a negative relationship between quantity demanded of poultry as a dependent variable and average price of poultry. when the price of a kilogram of poultry meat increased by one unit of money the quantity demanded of poultry decreased by 2.06 kilogram.
