|b The underground quarries found on the Mio-Pliocene hill at Ksour Essaf (Tunisia) contribute to enrich our knowledge about the extraction techniques already in use since Antiquity. The geological analyses carried on cut stones from different formations revealed that the quality of the Mio-Pliocene stone is better than this of the Rejiche formation stone. Yet, the latter which is more abundant than the former has been more used. Thanks to extraction technique and the use of cut blocks in the Roman constructions whereas they are missing in the Middle Age Muslim constructions in this area, the exploitation of the underground quarries from the Roman Empire.
