The olive oil industry m North Sinai is one of the most important industries that have its components, which has contributed to the spread and development of its production, It has an internal and external market. Its components include the presence of olive farms, the experience, the good roads network and its nutritional importance. Its oil production fluctuates, between 15.6 and 34.3 % of total production, and the center of El Arish production by not less than 65%, and spread 30 automatic presses producing oil. The study area consumes a large amount of production annually between less than half and two thirds, and markets between a quarter and a half to 12 provinces at the start of Cairo, and the remaining percentages in the field of international trade to the Gulf States, Palestine, Europe and Indonesia by about 25 %. This industry indicates the feasibility of investment where the rate of return is about five times the cost. The industry needs to raise awareness of the importance of olive oil as food .with appropriate storage and improve its specifications and encourage research aimed at reducing the cost of manufacturing and raising the efficiency of management with increasing awareness of exporters and the promotion of industries based on olive oil and its residues.
تعد صناعة زيت الزيتون في محافظة شمال سيناء من الصناعات المهمة التي تتوفر مقوماتها مما ساهم في انتشارها وتطور إنتاجها وأصبح لها سوق داخلي وخارجي، ومن مقوماتها وجود مزارع الزيتون والخبرة وشبكة الطرق الجيدة وأهميته الغذائية، ويتسم إنتاجها من الزيت بالتذبذب ويتراوح بين 15.6 و34.3 % من إجمالي الإنتاج، ويتصدر مركز العريش الإنتاج بنسبة لا تقل عن 65%، وتنتشر بها 30 معصرة آلية تنتج الزيت بدرجاته. وتستهلك منطقة الدراسة كمية كبيرة من إنتاجها يتراوح سنويا بين بين أقل من النصف والثلثين، ويسوق ما بين الربع والنصف إلى 12 محافظة في مقدماتها القاهرة، وتدخل النسب المتبقية في مجال التجارة الدولية إلى دول الخليج وفلسطين وأوروبا وإندونيسيا بنحو 25%. وتشير هذه الصناعة إلى جدوى الاستثمار فيها حيث تصل نسبة العائد نحو خمس أضعاف التكلفة. وتتطلب هذه الصناعة نشر الوعي بأهمية زيت الزيتون كغذاء مع التخزين المناسب وتحسين مواصفاته وتشجيع الأبحاث التي تهدف إلى خفض تكلفة التصنيع ورفع كفاءة الإدارة مع زيادة الوعي لدى المصدريين وتشجيع الصناعات التي تقوم على زيت الزيتون ومخلفاته.
