المستخلص: fatty acids play essential role in biological tissues in the transport of substances in and out of the cell as it has important effect on the fluidity of the cell membrane [1].A gas Chromatographic method using Econo-cap carbowax columns (ID0.32,length 30m) and Arachidic acid as internal standard was developed and validated for qualitativedetermination of fatty acid methyl ester in olive oil and other vegetable oil. Extracted triglycerides were converted to corresponding methyl esters using base trans- esterification method with 0.25M NaOCH₃ in 1:1 methanol: diethyl ether. A method validation process has confirmed instrument precision with determination of RSD%for retention time ≤ 1 and for peak area RSD%> 10.Also,robustnessof the method has tested by using the Plackett-Burman designand assessing the impact of two factors: temperature and flow rate at two different levels,the result has passed for C16:0, C18:1 and C18:2 .Limit of detectionwas around 10µg/mland Sensitivity with the good resolution was achieved .In addition, The fatty acids composition of differentvegetable oil was compared with the International Olive Council (IOC) data and Oleic acid(C18:1)was the most abundant species in the analysing of edible oils.
