The olive tree plays an important role in the Tunisian patrimoine related to trees during the colonial era. Its exploitation has known various forms. Olive oil as well as its by-products and particularly pomace have gone trough different treatments to extract products useful for the produc¬tion of soap and the machinery lubrification. From olive oil mills to factories then to the market, the pomace and its oil have improved the commercial activity. L’olivier représente à l’époque coloniale une part importante du patrimoine arboricole tunisien. Son exploitation a connu plusieurs formes. Les huiles, ainsi que les sous-produits de cet arbre et plus particulièrement les grignons ont été soumis à des traitements pour tirer des produits utiles à la fabrication des savons et le graissage des machines. En passant des hui¬leries aux usines, puis aux marchés, les grignons et leurs huiles ont stimulé l’activité commerciale. |
