Beaucoup d'entreprises agroalimentaires essayent de se positionner sur des dizaines de mots-clés, comme « sans sucre ou sans gras, etc. » au niveau de chaque élément du marketing mix. Le but de cet article est de faire le focus sur l’évolution du marketing alimentaire. Scindé en deux parties, l’article examine, d’une part, le comportement responsable du consommateur dans le point de vente et devant son assiette, et, d’autre part, la réaction du producteur et du distributeur en mettant en exergue les paramètres marketing qui favorisent la consommation qualitative et quantitative de leurs produits.
