المستخلص: يعتبر محصول الخرشوف ذو أهمية اقتصادية وتتركز زراعته في محافظات وجه بحري وتعتبر مصر ثاني دولة منتجة بنسبة تمثل 17.8%، من متوسط إنتاج العالم لمحصول الخرشوف، حيث تصدر مصر من الخرشوف نحو 10 ألف طن وهو ما يمثل 24.1% من متوسط صادرات العالم من محصول الخرشوف والذي تبلغ نحو 41.11 ألف طن خلال متوسط الفترة (2009/2013)، وبدارسة الأهمية النسبية لصادرات العالم من الخرشوف تبين أن إسبانيا جاءت في المركز الأول لتصدير محصول الخرشوف بنسبة بلغت نحو 31.2% من متوسط الكمية المصدرة البالغة نحو 12.8 ألف طن خلال الفترة (2009- 2013)، بينما تأتي مصر في المرتبة الثانية حيث تمثل نحو 24.1% من متوسط الكمية المصدرة البالغة نحو 9.9 ألف طن خلال الفترة (2009- 2013). وتبين من دراسة الاتجاه الزمني العام لكمية وقيمة الصادرات للخرشوف العالمي والمصري أن هناك استقرار نسبي في كمية صادرات العالم من الخرشوف، الأمر الذي يوضح أن هناك طلب على الخرشوف في الأسواق العالمية، وأن الأسواق الاستيرادية من الخرشوف العالمي لديها قدرة استيعابية لكميات أكبر من الخرشوف المستورد، وتبين أيضا أن سعر صادرات الخرشوف المصري يزداد سنويا بنحو 117.5 دولار للطن خلال فترة الدراسة، الأمر الذي يبين أن سوق الخرشوف العالمي سوقا واعدا، وأن ارتفاع معدلات أسعاره التصديرية المصرية ترجع بالدرجة الأولى إلى انخفاض الكمية المعروضة منه للأسواق الاستيرادية العالمية. وأوضحت نتائج نموذج استجابة العرض للخرشوف المصري أن العامل المحدد للمساحة المزروعة هو النسبة السعرية للسعر المزرعي للخرشوف المصري إلى السعر المزرعي للخرشوف الإيطالي وأن إسبانيا هي المنافس لإنتاج الخرشوف المصري، وباستخراج مرونة العرض السعرية للخرشوف المصري بلغت حوالي 0.5 والتي توضح أن الخرشوف سلعة ضرورية بالنسبة لمنتجيه، أي صعوبة العزوف عن زراعته وهو ما يتفق والمنطق الاقتصادي.
