المستخلص: يعتبر البيف برجر من أكثر الأطعمة السريعة شهرة . لكن التأثير السيئ للأغذية السريعة يتمثل في خطورة استهلاكها المنتظم و في أنها تؤدى إلى السمنة المفجعة و زيادة مستوى الكوليسترول، وسوء التغذية، ومشاكل في القلب، ونقص كتلة العضلات، وكذلك الضعف الجنسي. ان الطبيعة الادمانية للأغذية السريعة هي واحدة من أهم التأثيرات المضرة لها حيث أن المستوى العالي للسكر والدهون يسبب ارتفاع مفاجئ لسكر الدم وانخفاضه فجأة، وهذا الارتفاع يسبب نوع من النشوة ترجع إلى زيادة سكر الأنسولين. الدهون المشبعة مكونة من ثلاثي الجليسريد ويتكون من أحماض دهنية مشبعة لا تحتوى على روابط مزدوجة بين ذرات الكربون المفردة في سلسلة الأحماض الدهنية والدهون المشبعة تزيد من إنتاج الجسم للكوليسترول. الدهون الانتقالية هي اسم شائع للدهون الغير مشبعة وتعتبر نظائر للأحماض الدهنية. استهلاك الدهون الانتقالية يزيد من خطورة التعرض لأمراض القلب وذلك لأنها ترفع مستوى الكوليسترول المنخفض الكثافة وتخفض مستوى الكوليسترول العالي الكثافة وهو الكوليسترول الجيد. في هذه الدراسة يتم تجميع ثمانية عشرة عينة من شطائر البيف برجر حيث يتم جمعها من ثلاث مطاعم من سلاسل المطاعم العالمية وكذلك من ثلاث مطاعم من سلاسل المطاعم المحلية. يتم قياس نسبة الدهون الكلية، والدهون المشبعة، والدهون الانتقالية في العينات ومقارنة النسب بين سلاسل المطاعم العالمية والمحلية ثم مقارنة هذه النسب بالنسب المنصوح بها من منظمة القلب الأمريكية. اقترح التقليل من استهلاك الوجبات السريعة لأن ذلك سيؤدى إلى تحسن الصحة العامة للمستهلك.

Despite of the continuing flow of the hospitality investments which resulted in its improvement, the sector still suffers from the assistant financial managers’ lack of recognition to the importance of budgets as a periodic future plan control tool. Hotel performance is largely affected not to pay attention to the (BCS) itself. The research was designed to measure if there are relationships between hotel performance and (BCS) application level in some five-star hotel chain and between hotels' characteristics under study and (BCS) application level. The sample consists of 31 hotels belonged to five-star hotel chains in three cities in Egypt (8 in Alexandria, 11 in Cairo, and 12 in Giza). Data were collected from assistant financial managers (AFMs) in July and August 2011. Questionnaire surveys were used and data were analyzed by a variety of statistical methods such as percentages, mean, standard deviation, Z score, T score, cross tabulation Chi-Square, in addition to the simple correlation coefficient. Results indicated that there was no actually employees' participation in most of hotels in the budget preparation and lack participation in the budget' committee from both of the housekeeping and front office managers in most hotels of the sample; because the rooms' division manager involved in the budget preparation. According to the most important elements of successful implementation of the (BCS), results showed that the more elements that have been selected by order are to identify and clear goals, fully participate in the budget preparation, identify responsibility accounting, presenting budget reports, top management's support, motivation, the existence of the budget organizational structure, determine the budget period, the existence of a feedback system and using flexible budgets.
